Cheese and Leek baked potato recipe

Cheese and Leek Jacket Potatoes

Preparation Time: 10mins
Cooking Time: approx 70 minutes
Serves: 2

Tip: For a healthy vegetarian meal, serve with a fresh salad.

 

Ingredients
  • 2 medium baking potatoes e.g. Estima or Marfona, scrubbed
  • 1 tbsp olive oil
  • 200g leeks, sliced
  • 2 tbsp mayonnaise
  • Salt and pepper
  • Dash Worcestershire sauce
  • 50g cheddar cheese, grated
Directions
  1. Scrub the potatoes and place in a pre-heated King Edward oven at approx 200°C.
  2. Cook for approximately 1 hour until thoroughly cooked.
  3. After the potatoes have been cooking for approx 45-50 minutes prepare the fillings. Heat the oil in a frying pan and fry the leeks for 3-4 minutes.
  4. Cut the potatoes in half lengthways, scoop out most of the flesh and mix with the leeks, mayonnaise, seasoning and Worcestershire sauce. Place back in the potato jackets.
  5. Top with cheese and place under a preheated grill for 3-4 minutes or back in the oven for a further 5 minutes, until melted and lightly golden.
  6. Those potatoes not served can be transferred to the top display/storage area to stay hot until you are ready to serve them.
  7. Always use insulated oven gloves when handling hot potatoes and opening/closing the oven door.
